Chickpea winter red stew
Not all chickpeas are created equal! Some profess about the dried variety, preferring to soak them and boil them from scratch, but I prefer the convenience of jarred (less canned) chickpeas. There are some great new brands now and I really love the Bold Bean Company personally but you do you. If you can spend a few more pennies then the bigger queen chickpeas are softer, more satisfying and definitely add to the hearty factor in this brilliant, bold red winter stew.
Served well with any grain or even potatoes, bread and pasta. I prefer mine with a bowl of spiced couscous or lightly spiced, buttered rice.

Spicy, flavourful and easy! A good winter-warmer, crowd pleaser or midweek dinner.

Ingredients
570g queen chickpeas (or two cans)
1/2 onion, chopped
2 cloves of garlic, minced
1 thumb of ginger, finely grated
1 stick of cinnamon
1 large red chilli, fire roasted over a flame
1 red pepper
2 heaped tbsp of tomato puree
2 large tomatoes, blended
Salt, to taste
1 teaspoon dried chilli flakes
1 teaspoon cumin powder
2 tbsp fresh orange juice
2 tsps fresh lemon juice
1 tsp sugar
1 tsp sweet paprika powder
Handful of fresh flat leaf parsley
